Description
The Riess Eisen Holzknechtpfanne is an iron frying pan with a wooden handle and brass hanging ring, available in Ø20 cm and Ø24 cm. Thanks to iron’s rapid heat conduction, it is ideal for searing, making fried potatoes and meat particularly crispy. Over time, the porous structure develops a patina that acts as a non-stick coating and protects against corrosion.
The Holzknechtpfanne is a classic in the range of frying pans and a real focal point in any kitchen. Its alpine-sounding name comes from its distinctive wooden handle. The brass ring at the end of the pan handle means the pan can be stored not only stacked, but also hung up. For frying and serving straight from the pan, the RIESS Holzknechtpfanne is a great choice and brings a cheerful touch to the table. Our Holzknechtpfanne also makes an excellent serving pan, meaning less washing up.
Chefs value iron frying pans not only for their rustic appearance, but above all for their excellent frying properties. Thanks to iron’s rapid heat conduction, iron frying pans are ideal for quickly searing food at high heat. Fried potatoes and meat become particularly crispy in iron frying pans.
This pan performs better and better over time. The reason is that the pan’s porous structure absorbs fat and develops what is known as a patina, which provides good non-stick properties and protects against corrosion. With the right care to prevent rust from forming, RIESS iron frying pans are reliable, long-lasting companions for many kitchen adventures.

Frequently asked questions about the series
Which Classic products are suitable for induction hobs?
According to Riess, the pots, saucepans and frying pans in the Classic range are suitable for all hob types, including induction. Start on a low heat and do not use the boost function. The compatible hob types are listed for each product.
Can Classic baking tins be used in the oven?
Yes, the baking tins and baking trays are designed for use in the oven. Riess does not specify a maximum oven temperature. The tins and handles become hot, so use oven gloves.
Can Classic enamel go in the dishwasher?
Yes, according to Riess, most Classic products are dishwasher-safe, preferably using the gentle glassware programme. For a lasting shine, Riess recommends washing them by hand. This information is provided for each product.
Why are there small areas without enamel around the rim?
According to Riess, these are support points from the manufacturing process: the cookware is hung on hooks to dry. Riess does not consider this a defect. To prevent flash rust from forming there, store the cookware thoroughly dried and occasionally grease the exposed edges with cooking oil.

Brand
Since 1922, Riess has been enamelling cookware in Ybbsitz, Lower Austria: glass fired onto steel at 850 °C. Riess pots and pans work on all hob types, including induction.
