How to recognise a good kitchen knife

Care: how to keep the blade sharp

Wash your knives by hand — the dishwasher damages both the blade and the handle. Store them on a magnetic strip or in a knife block to protect the edge. And regularly run the blade over a honing steel — we stock suitable models directly from Güde.

Which kitchen knife should I buy first?

Start with a chef’s knife — it covers most cutting tasks. Next, add a small knife for peeling and a bread knife. Specialist shapes such as the Chai Dao are worth considering if you chop a lot of vegetables.

Why shouldn’t good knives go in the dishwasher?

Salt, heat and knocks against other cutlery blunt the edge and damage wooden handles. Hand-washing takes 20 seconds and adds years to a knife’s life.

Do I need a honing steel?

Yes — regular honing realigns the edge and preserves its everyday sharpness. Only a genuinely worn blade needs sharpening on a whetstone. You’ll find suitable honing steels in the Güde collection.
