Description
Güde hand-forges the blade of the Alpha Olive 21 cm bread knife (item no. X430/21); the company is based in Solingen. The serrated blade made from chrome-vanadium-molybdenum steel cuts through soft and hard crusts, bread rolls and baguettes just as effortlessly as pumpkin, roasts and melons.
Serrated edge and steel
The 21 cm blade is ground on one side and has a serrated edge. Blade thickness: 2.6 mm; blade height: 3.2 cm; hardness: approx. 56 HRC. Steel: X50CrMoV15, ice-hardened. Weight: approx. 206 g with a total length of 33.5 cm — manufacturer's specifications, all figures approximate.
Olive wood handle
Güde uses olive wood for the handle, which according to the manufacturer can be up to 500 years old. Secured with stainless steel and aluminium rivets, the knife is, according to the manufacturer, optimally balanced in the hand. Everyday length: 21 cm for bread rolls and standard loaves
If you mainly cut bread rolls, baguettes or a household-sized loaf, this length is sufficient. Only when cutting large rustic loaves or several loaves in succession does a longer blade of around 32 cm offer an advantage, as it cuts through the crust in a single stroke instead of sawing through it.
