More about Bread Knives
A good bread knife cuts cleanly through a crisp crust without crushing the soft crumb or flattening the bread as you saw through it – blade length and a sturdy, comfortable handle shape are key. At Taiga, we stock Güde bread knives with blade lengths from 21 to 32 cm: from the Alpha range with olive wood, walnut, pear wood or barrel oak handles, through the compact Kappa and Synchronos ranges, to the Delta range with a grenadill wood handle.
Buying guide: what matters when choosing a bread knife
The right blade length depends on the bread: 21 cm is enough for toast, baguettes or small loaves, while 26 to 32 cm is the more practical choice for large sourdough or tin loaves, as the blade cuts through in one smooth motion instead of requiring a sawing action. When it comes to the handle, the wood affects both feel and care: olive wood and walnut are dense and grippy, while barrel oak and grenadill wood also feature a distinctive grain. Güde solid wood handles should not be soaked in the sink – washing them by hand and occasionally treating them with oil will keep them looking good for years.
Brands
Taiga stocks Güde exclusively for bread knives – a German knife manufacturer known for hand-forged blades and handles made from solid fine hardwoods. Focusing on one brand means every blade length and handle wood offers consistent manufacturing quality, without blending different quality levels.
What blade length does a bread knife need?
21 cm is enough for everyday toast or smaller loaves. If you regularly cut large sourdough or tin loaves, 26 to 32 cm is the better choice, as the blade cuts through the bread in one continuous stroke rather than through several sawing movements.
Which handle material lasts the longest?
Solid wood handles such as olive, walnut or barrel oak are highly durable when cared for properly: wash them by hand, do not put them in the dishwasher, and oil them lightly from time to time. This keeps the wood dense and the grain visible.
