Description
The 32 cm-long, bevelled blade of the Güde bread knife E431/32 (Alpha Fasseiche series) features Güde’s proverbial serrated edge with pointed teeth. Güde hand-forges it; the company is based in Solingen.
Pointed serrated edge, X50CrMoV15 steel
According to the manufacturer, this edge improves cutting performance and edge retention; the blade cuts effortlessly through any bread crust, whether soft or hard. Blade thickness 3.9 mm, blade height 4.5 cm, hardness approx. 56 HRC, single bevel, hand-forged from chrome-vanadium-molybdenum steel, stainless. Overall length approx. 46 cm, weight approx. 335 g — manufacturer’s specifications, each given as an approximate value.
Wine barrel oak handle
The wood comes from wine barrels over 80 years old; according to Güde, its long maturation has made it almost indestructible. The rivets are stainless steel, while the palm rivet is made of aluminium. The Güde collection showcases other knives in the series.
Large format: what 32 cm is designed for
If you bake large rustic loaves, sourdough loaves or several loaves in succession, you benefit from the length — one continuous cut instead of repositioning the knife several times. For bread rolls and baguettes in everyday use, a shorter blade is sufficient.
Care
The oak handle is not dishwasher-safe. You can find other sizes in the bread knife collection and across the full range of kitchen knives.
